Stuffed Jalapeno Peppers

For those who like their appetizers with a little snap!
Ingredients -
10 large Pickled jalapenos
10 Pieces Pepper Jack cheese
2 egg whites (beaten)
3 tablespoons Cornmeal
3 tablespoons Flour
oil for deep-frying
 
Preparation:

1. Cut open the sides of the peppers and scrape out the seeds.

2. Stuff with pieces of pepper jack cheese cut to fit the individual peppers.

3. Dip peppers in the egg wash and then into a mixture of half cornmeal and half flour.

4. Repeat, and allow them to dry for about 15 minutes.

5. Deep fry in hot oil until the peppers are lightly browned and the cheese is just melting.

6. Drain on absorbent paper, and serve.

Grease Fires
If grease or oil in the pan ignites, smother the fire with a lid or baking soda and turn off the stove. Never use water, which causes grease fires to spread
