Steak Fajitas with Lime

 
Ingredients -

2 12-ounce halved skirt steaks
3 tablespoons fresh lime juice (divided)
1 large onion, halved lengthwise (thinly sliced)
4 large garlic cloves (pressed)
1 1/2 tablespoons hot chili sauce (such as sriracha)*
1 tablespoon ground cumin
1 teaspoon finely grated lime peel
2 tablespoons extra virgin olive oil
12 cherry tomatoes
1/3 cup thinly sliced fresh basil

 
Preparation:

1. Warm flour or corn tortillas.

2. Arrange steaks in 13x9x2-inch glass baking dish.

3. Sprinkle with salt and pepper.

4. Combine 2 tablespoons lime juice and onion, garlic, chili sauce, cumin and lime peel in medium bowl.

5. Pour onion mixture over steaks.

6. Turn to coat evenly.

7. Marinate 10 minutes.

8. Heat oil in large nonstick skillet over high heat.

9. Add steaks with onion mixture.

10. Cook steaks 1 minute per side.

11. Add tomatoes and basil.

12. Continue cooking steaks to desired doneness, turning occasionally, about 3 minutes longer for medium-rare.

13. Sprinkle mixture with 1 tablespoon lime juice. Cook 1 minute longer to blend flavors.

14. Transfer steaks to work surface.

15. Cut across grain on slight diagonal into 1/2-inch-thick strips.

16. Transfer fajitas to bowl and serve with tortillas.

One of my favorite recipes is 'frying' flour tortillas in no calorie, butter-flavored cooking spray. As they 'fry' they puff up and can easily be pulled apart. It's like getting two tortillas for the calorie-price of one!
