1. Preheat grill to medium heat.
2. In a small bowl, whisk 4 tablespoons chopped fresh cilantro, fresh lime juice, and lime zest.
3. Season cilantro vinaigrette with sea salt and fresh ground black pepper.
4. Brush both sides of snapper fillets and mango slices with vinaigrette, reserve remaining vinaigrette for later.
5. Season snapper fillets and mango slices with sea salt, fresh ground black pepper and cumin seeds
6. Grill snapper fillets about 6 minutes, turning once.
7. Grill mango slices until they begin to caramelize.
8. Arrange 2 lettuce leaves on each plate. Top lettuce with grilled snapper fillets and mango slices.
9. Drizzle with remaining vinaigrette.
10. Garnish with chopped cilantro. |
