Chili Salsa Beef

Crock pot Mexican beef dish for serving over rice. Boneless chuck or flank steak cooked with salsa, soy sauce, brown sugar, cilantro, Mexican style tomatoes, garlic and lime juice.
Ingredients -

2 pounds Boneless Beef, Chuck or Flank, fat trimmed
1/2 cup Chunky Salsa
2 tablespoons Brown Sugar
1 tablespoon Soy Sauce
1 tablespoon Dried Cilantro
1 (15 ounces) can Mexican Style Tomatoes
1 clove Garlic
2 tablespoon Fresh Lime Juice

 
Preparation:

1. Place beef in crockpot.

2. In a bowl, combine salsa, brown sugar, soy sauce, cilantro, Mexican style tomatoes, garlic, and lime juice.

3. Pour tomato mixture over beef.

4. Cover crockpot. Cook on LOW 8-10 hours.

5. Shred meat after allowing to cool slightly.

6. Serve meat over rice.

Tortillas can be warmed in the microwave. Sprinkle tortillas with water, wrap in waxed paper and microwave on high 35-45 seconds.
