Black Bean Dip

Black beans, cumin, hot sauce, tomato, red onion, and cilantro blended smooth. Served with tortilla chips for dipping.
Ingredients -

1 Plum Tomato, diced
2 tablespoons diced Red Onion
1 tablespoon Fresh Cilantro, chopped
2 (15 ounces) cans Black Beans, drained
1 tablespoon Ground Cumin
2 teaspoons Hot Sauce
Coarse Salt, to taste
Tortilla Chips, for dipping
Cilantro sprigs for garnish

 
Preparation:

1. Add tomato, red onion and fresh cilantro to food processor. Pulse until coarsely chopped.

2. Add black beans, ground cumin, hot sauce, and salt. Pulse until smooth.

3. Remove to decorative bowl. Garnish with cilantro sprigs.

4. Serve with tortilla chips.

Fresh Cilantro
Substitute fresh chopped parsley for the cilantro, if desired.

Grilling Chicken
When grilling chicken for use in Mexican recipes, a medium sized boneless chicken breasts should be placed on rack directly over coals, grilled 6 minutes, turned once and grilled another 6 minutes. Allow chicken to cool before slicing.
