Beef Pepper Quesadillas

Thin beef strips, onion, bell pepper and cumin topped with jack cheese layered inside tortillas. Tortillas are folded, and baked. Quesadillas are served with salsa and sour cream.
Ingredients -

1 Beef Round Cube Steak (about 6 ounces), cut in thin strips
1 medium-size Onion, cut in thin wedges
1 medium-size Sweet Green Pepper, cut in strips
1 teaspoon Ground Cumin
1/4 teaspoon Salt
1/2 cup shredded Jack Cheese
4 (10-inch) large Flour Tortillas
1 medium-size Tomato, coarsely chopped
1/2 cup bottled Salsa
Sour Cream

 
Preparation:

1. Preheat oven to 425 F.

2. Coat large baking sheet and large skillet with non-stick cooking spray.

3. Heat skillet over medium-high heat.

4. Add steak strips, onion wedges, bell pepper strips, and cumin to skillet. Cook, stirring occasionally until meat is browned and vegetables tender crisp. About 5 minutes.

5. Season with salt. Remove from heat.

6. Sprinkle half cheese over halves of 4 tortillas. Top cheese with steak mixture.

7. Sprinkle with remaining cheese.

8. Fold tortillas over to over quesadilla mixture. Fasten with toothpicks.

9. Place tortillas on baking sheet. Bake 8 minutes or until lightly browned.

10. Stir together chopped tomato and salsa in small bowl.

11. Cut each quesadilla into 3 triangles.

12. Serve with tomato salsa and sour cream.

You could substitute with another lean cut of beef.

Queso Anejo
Queso Anejo is a hard cheese, often grated and used to top dishes. If the recipe calls for queso anejo, substitute with Parmesan or a dry feta, if necessary.
